Ingredients

  • 4 cups cooked red beans

  • 1 cup cooked frozen corn

  • ¼ cup cooked frozen peas

  • 1 tomato fresh chopped

  • ½ cup sun dried tomatoes

  • 1 red onion chopped

  • 1 avocado chopped

  • red balsamic vinegar to taste

  • 2 tablespoons taco mix spice

  • ½ cup chopped black olives

Directions

  • mix all ingredients
  • add vinegar to taste
  • serve cold
